The “Pure Water” washing method uses fresh, clean running water throughout the washing and soaking stages, helping to minimise unwanted flavours and create a cleaner cup.

Inspired by Kenya’s K72 method, the coffee undergoes 72 hours of fermentation in washing tanks. On the second night, the fermentation water is replaced with fresh, clean cold water, slowing down the fermentation for a cleaner and more controlled profile.

After fermentation, the parchment coffee is spread in a single layer on shaded African raised beds and slowly dried for over two weeks.

The result is a delicate and expressive cup, with white blossom and bergamot aromatics, juicy blueberry sweetness and a bright orange finish.
